Blueberry Lemon Ricotta Rice Cakes

These are the perfect combo of sensible and oh-so-snackable, just what you need to shake off those mid-day blues.

Juicy blueberries and zesty lemon teaming up with creamy ricotta cheese, all topped off with a touch of basil for that extra kick of flavor. It’s like a burst of happiness in every bite!

Ingredients:

  • 1⁄2 cup part-skim ricotta cheese
  • 2 teaspoons lemon zest
  • 1 cup fresh blueberries
  • 2 tablespoons thinly sliced fresh basil
  • 2 tablespoons powdered sugar
  • 1 tablespoon lemon juice
  • 4 plain rice cakes

Method

1. Stir together ricotta and lemon zest; set aside.

2. Toss together blueberries, basil, powdered sugar, and lemon juice; let stand for 10 minutes.

3. Spread ricotta over rice cakes; top with blueberry mixture.
