Healthy Seven-Layer Taco Dip

Wait, taco’s aren’t healthy?  Nahhh….

Luckily, there’s a way to lighten up the classic recipe, so it’s not quite so heavy.

Makes eight to ten servings.




3 medium-sized ripe avocados

2 tablespoons of lemon juice

1/2 teaspoon of salt

1/2 teaspoon of pepper

1.5 containers of plain Greek yogurt

1 package of taco seasoning mix

2 cans (9 ounces each) of bean dip or 2 cans of refried beans (your choice)

1 bunch of green onions, chopped

3 medium-sized ripe tomatoes, chopped

2 cans (3.5 ounces each) of pitted ripe sliced olives, drained

1 package (8 ounces) of grated sharp cheddar cheese


Peel, pit, and mash avocados in a bowl with lemon juice, salt, and pepper.

In another bowl, combine the yogurt and the taco seasoning mix.

To assemble, spread bean dip or refried beans on a large shallow serving platter.

Spread the avocado mixture over the bean dip.

Spread the yogurt-taco mixture over the avocado mixture.

Sprinkle with the chopped green onions, then the tomatoes, and then the olives.

Cover with the grated cheddar cheese.

Serve chilled with your choice of tortilla or corn chips.
